60ml White Pearl Gin
15ml lime juice
10 ml sugar syrup
12 Fresh mint leaves
Into an old fashion glass muddle the mint, sugar syrup and lime juice.
Add ice, gin and top up with ginger beer.
Garnish a lime wedge and candied ginger.
